New Potatoes and Vegetables

Serves: 6-8

What you need:

2 lbs new potatoes, halved

2 cups baby carrots, cut in half length-wise

1 yellow onion, sliced

1 tsp salt

1 bunch asparagus, ends trimmed and chopped

1/4 cup olive oil

6 tbsp chopped fresh dill weed

2 tsp lemon zest

2 tbsp Dijon mustard

1 tsp salt

What to do:

p<>{color:#000;}. Place all ingredients in your slow cooker and sprinkle with salt.

p<>{color:#000;}. Cook for 5-6 hours on low, stirring occasionally.

Roasted Veggies

Serves: 4-6

What you need:

3 medium zucchini

1 lb carrots

2 tbsp olive oil

1 package dry Italian dressing mix

What to do:

p<>{color:#000;}. Thickly slice the carrots and zucchini.

p<>{color:#000;}. Place slices in slow cooker and drizzle with olive oil.

Sweet Carrots

Serves: 2-3

What you need:

3 carrots, peeled and sliced

2 tbsp butter

3 tbsp brown sugar

What to do:

p<>{color:#000;}. Cook on low for 4-5 hours.

Slow Cooker Artichokes

Serves: 4

What you need:

4 medium sized artichokes, rinsed

1 cup white wine

2 tbsp lemon juice

1 tbsp olive oil

2 cloves garlic, minced

Salt, to taste

What to do:

p<>{color:#000;}. Cut the stems off of the artichokes.

p<>{color:#000;}. Trim about an inch off of the artichoke, exposing the heart.

p<>{color:#000;}. Brush lemon juice on the artichoke heart.

p<>{color:#000;}. Place the artichokes, hearts up in your slow cooker and pour on the rest of the lemon juice.

p<>{color:#000;}. Drizzle olive oil over the artichokes and sprinkle on the garlic and salt.

p<>{color:#000;}. Pour the wine into the bottom of the slow cooker.

p<>{color:#000;}. Add water until there is about 2 inches of liquid in the bottom of the slow cooker.

Sweet Potatoes

Serves: 4

What you need:

4 medium sized sweet potatoes

Butter

Brown sugar

Mini marshmallows

What to do:

p<>{color:#000;}. Scrub, wash, and dry the sweet potatoes.

p<>{color:#000;}. Poke each potato with a fork several times.

p<>{color:#000;}. Wrap each potato in foil twice.

#
p<>{color:#000;}. Place potatoes in slow cooker and cook on high for 4 hours or on low for 8 hours.

p<>{color:#000;}. Top with butter, brown sugar, and mini marshmallows before serving.

Teriyaki Mushrooms

Serves: 4-6

What you need:

1 16-oz package of button mushrooms, cleaned well and trimmed

1 cup teriyaki sauce

What to do:

p<>{color:#000;}. Pour the teriyaki sauce over the mushrooms.

Cheddar Creamed Corn

Serves: 6-8

What you need:

32-oz of frozen corn

1 8-oz block of cream cheese, cubed

1 cup shredded cheddar cheese

1/4 cup butter

1/2 cup heavy cream

1/2 tsp salt

1/2 tsp pepper

What to do:

Scalloped Potatoes

Serves: 6-8

What you need:

6 potatoes, peeled and sliced

1-2 onions, diced

1/4 cup diced celery

1 tbsp chopped parsley

2 tbsp butter

1/4 cup all-purpose flour

1 tsp salt

1/2 tsp black pepper

12 oz evaporated milk

2 cups shredded cheddar cheese

1/2 tsp paprika

What to do:

p<>{color:#000;}. Layer the potatoes and onions in the bottom of your slow cooker.

p<>{color:#000;}. In a mixing bowl, stir together the celery, parsley, butter, flour, salt, pepper, evaporated milk, cheese, and paprika.

p<>{color:#000;}. Cook on low for 6-8 hours or until potatoes are tender.

Pinto Beans

Serves: 4-6

What you need:

1 lb dry pinto beans

1 quart chicken broth

2 tsp sea salt

1 tsp pepper

1 bay leaf

What to do:

p<>{color:#000;}. Add beans, chicken broth, salt, pepper, and bay leaf to your slow cooker. Add enough water to cover the beans.

p<>{color:#000;}. Cook on low for 6-8 hours. Check occasionally to see if you need to add more water.

p<>{color:#000;}. After beans are cooked, add more salt and pepper if needed.

Cheesy Cauliflower

Serves: 4-6

What you need:

2 12-oz packages frozen cauliflower

2 10-oz cans cheddar cheese soup

1 cup shredded cheddar cheese

Salt and pepper, to taste

What to do:

Cheesy Mashed Potatoes

Serves: 4-6

What you need:

2 1/2 lbs of red potatoes; washed, peeled, and quartered

4 tbsp butter, sliced

1 tsp salt

4 oz cream cheese, cubed

1/2 cup sour cream

1 cup shredded cheddar cheese

What to do:

p<>{color:#000;}. Season the potatoes with salt and place the slices of butter on top.

Broccoli Cheese Rice

Serves: 6-8

What you need:

1 yellow onion, diced

1 clove garlic, minced

1 1/2 cups uncooked long grain rice

1 32-oz box chicken broth

Salt and pepper, to taste

2 cups chopped broccoli florets

1 1/2 cups shredded cheddar cheese

What to do:

p<>{color:#000;}. Place all ingredients except the cheese in your slow cooker and stir until mixed well.

p<>{color:#000;}. Stir in the shredded cheese and cook for another hour before serving.

Lentil Soup

Serves: 6-8

What you need:

4 cups lentils, rinsed

32 oz beef or vegetable broth

2 cups water

1 yellow onion, diced

2 cups sliced carrots

1/2 cup sliced celery

28 oz can diced tomatoes

1 large potato, peeled and cubed

4 cloves garlic, minced

1/2 tsp black pepper

What to do:

p<>{color:#000;}. Cook on low for 7-8 hours or until the vegetables are tender.

Vegetable Stew

Serves: 6-8

What you need:

2 yellow onions, diced

3 stalks celery, diced

2 large carrots, sliced

3 potatoes, peeled and diced

1 cup mushrooms, cleaned and chopped

1/4 cup lentils

3 cloves garlic, minced

1/2 tsp grated ginger

1/2 tsp thyme

1 bay leaf

2 cups water

1/4 cup soy sauce

Salt and pepper, to taste

Cornstarch

What to do:

p<>{color:#000;}. Place the onions, celery, carrots, potatoes, mushrooms, lentils, garlic, ginger, thyme, bay leaf, water, and soy sauce in your slow cooker.

p<>{color:#000;}. Cook for 10-12 hours on low.

p<>{color:#000;}. Around 8-10 hours, add the salt, pepper, and a little bit of corn starch if you want your stew to be thicker.

Gumbo

Serves: 6-8

What you need:

2 15-oz cans black beans, rinsed very well

1 28-oz can rotel tomatoes

1 16-oz package frozen sweet peppers and onion stir-fry vegetables

2 cups frozen cut okra

2 tsp Cajun seasoning

Cooked rice

Green onions, chopped

What to do:

p<>{color:#000;}. Place the beans, rotel tomatoes, stir-fry vegetables, okra, and Cajun seasoning in your slow cooker.

p<>{color:#000;}. Cover and cook on low for 6-8 hours or high for 3-4 hours.

Tomato Basil Bisque

Serves: 4-6

What you need:

12 small tomatoes, diced

10 basil leaves, roughly chopped

1/4 tsp ground pepper

1 tbsp margarine or butter

1 6-oz can tomato paste

1 tbsp Italian seasoning

2 cups milk or soy milk

2 tbsp whole wheat flour

What to do:

p<>{color:#000;}. Place the tomatoes, basil, pepper, margarine or butter, tomato paste, and Italian seasoning in your slow cooker.

p<>{color:#000;}. Whisk the milk and flour together and pour the mixture over everything in the slow cooker.

p<>{color:#000;}. After 6-8 hours, mix everything with an immersion blender then serve.

Tortilla Soup

Serves: 6-8

What you need:

1 15-oz can diced tomatoes

1 cup water

1 15-oz can pinto beans, drained and rinsed

1 cup mushrooms, sliced

1/2 cup rice

1/2 cup chopped fresh cilantro

1 clove garlic, minced

2 tbsp hot sauce

2 tbsp corn meal

1 tsp chili powder

1/2 tsp salt

Dash of cayenne pepper

Dash of paprika

Dash of black pepper

What to do:

p<>{color:#000;}. Add all of the ingredients except the rice to your slow cooker and stir. Cook on high for an hour.

Vegetarian Sloppy Joes

Serves: 4-6

What you need:

1 1/2 cups lentils

2 cups brown rice

8-10 cups water

1 yellow onion, diced

2 packets dry sloppy joe seasoning mix

2 tsp garlic powder

1 can tomato paste

1/2 cup ketchup

2 tbsp mustard

Salt and pepper, to taste

Whole wheat hamburger buns

What to do:

p<>{color:#000;}. Add the water, lentils, brown rice, onion, and seasoning mix to your slow cooker. Cook on high for 4 hours or until the lentils and rice are sauce and the mixture is thick.

p<>{color:#000;}. When the mixture is thick, add the garlic powder, tomato paste, ketchup, mustard, salt and pepper. Mix thoroughly and cook for another hour.

p<>{color:#000;}. Serve on wheat buns.

Enchilada Pasta

Serves: 4-6

What you need:

1 15-oz can black beans, very well rinsed

1 14.5 oz diced tomatoes

2 cups frozen corn

12 oz can of enchilada sauce

1 cup vegetable broth

1 tsp chili powder

1 tbsp chopped cilantro

1/2 tsp cumin

8 oz block cream cheese

2 cups dried orzo pasta

What to do:

p<>{color:#000;}. Place all of the ingredients except the orzo pasta in your slow cooker and cook on high for 4 hours or on low for 8 hours.

p<>{color:#000;}. Add in the orzo pasta and stir until everything is combined well.

Mexican Minestrone

Serves: 6-8

What you need:

2 15-oz cans black beans, drained and rinsed well

2 15-oz cans rotel tomatoes

2 14-oz cans vegetable broth

1 15-oz can whole kernel corn

1 15-oz can red kidney beans

2 cups diced potatoes

2 cups frozen green beans, chopped

1 cup salsa

What to do:

p<>{color:#000;}. Cook on low for 8-10 hours.

Corn Chowder

Serves: 4-6

What you need:

16 oz canned whole kernel corn, drained

2 potatoes, peeled and chopped

1 onion, chopped

1/4 cup butter

2 cups milk

2 cups chicken broth

Salt and pepper, to taste

1 tbsp chopped parsley

What to do:

p<>{color:#000;}. Combine all of the ingredients except 1/2 cup of corn, butter, and milk in your slow cooker.

p<>{color:#000;}. Cook on low for 7-9 hours, then puree in a blender, food processor, or with an immersion blender and return to the slow cooker.

Bean and Spinach Enchiladas

Serves: 4

What you need:

1 15-oz can of black beans, drained and rinsed

1 10-oz package of frozen chopped spinach, thawed and liquid squeezed out

1 cup frozen corn

1/2 tsp ground cumin

1 cup shredded cheddar cheese

Salt and pepper, to taste

32 oz of salsa

8 6-inch corn tortillas, warmed

3 cups shredded lettuce

1/2 cup diced tomatoes

1/2 cup diced cucumber

3 tbsp lime juice

1 cup chopped green onions

What to do:

p<>{color:#000;}. In a medium bowl, mix together the beans, spinach, corn, cumin, half the cheese, salt, and pepper.

p<>{color:#000;}. Pour 1 jar of salsa in the bottom of your slow cooker.

p<>{color:#000;}. Evenly divide the bean mixture between the corn tortillas. Roll up the tortillas and place them seam-side down in the slow cooker.

p<>{color:#000;}. Pour the other jar of salsa on top of the tortilla rolls and top with the rest of the cheese.

Vegetarian Lasagna

Serves: 6-8

What you need:

2 28-oz cans diced tomatoes, drained

3 cloves garlic, minced

1/4 cup chopped fresh oregano

Salt and pepper, to taste

1 15-oz container ricotta cheese

1/2 cup chopped fresh parsley

1/2 cup grated parmesan cheese

8 oz no boil lasagna noodles

1 bunch Swiss chard, chopped stems removed

2 cups spinach leaves

12 oz mozzarella cheese, grated

What to do:

p<>{color:#000;}. In a medium bowl, combine the tomatoes, garlic, oregano, salt and pepper.

p<>{color:#000;}. In another bowl, mix the ricotta cheese, parsley, parmesan cheese, and pepper.

p<>{color:#000;}. Scoop a fourth of the tomato mixture into the bottom of your slow cooker, top with a layer of noodles, then a layer of a fourth of the Swiss chard and spinach, and a fourth of the cheese mixture, then a fourth of the mozzarella cheese.

Vegetarian Fajitas

Serves: 4-6

What you need:

3 roma tomatoes, diced

4-oz can of diced green chilies

1 large green bell pepper, diced

1 yellow onion, sliced

1 1/2 tsp vegetable oil

2 tsp cumin

2 tsp chili powder

1/2 tsp dried oregano

1/4 tsp garlic salt

What to do:

Kale and Pepper Frittata

Serves: 4-6

What you need:

2 tsp olive oil

5 oz kale leaves, stems removed

6-oz jar of roasted red peppers, diced

1/2 cup sliced green onions

5 oz crumbled feta

8 eggs, beaten

1/2 tsp Cajun seasoning

Salt and pepper, to taste

What to do:

p<>{color:#000;}. Sauté the kale in olive oil in a skillet over medium-high heat for 5 minutes or until wilted.
