A quote I read the other day said, “A great friend is hard to find, difficult to leave and impossible to forget”. How true that is!

 

I know for a fact that a friendship goes through ups and downs, but the best way to keep a friendship alive is to forget about your own ego and to think only about how you feel for your friend and how they also think about you. For that reason, saying how sorry you are when you’ve argued is crucial and can sometimes make or break a friendship.

 

Since food has always been such an important part of our lives, what better way to say, “I’m sorry,” than a hearty meal with a wide variety of flavors and textures, a meal that yells, “I care for you and I’m not going to lose our friendship”? After all, home cooking is a way of showing love and affection for the people you are cooking for and your friend will surely appreciate a meal like this.

Humans have an ability to make friends easily, and those people who are likeminded, have the same hobbies, care, have the same values ,or people who simply find it easy to connect with each other despite their age differences, skin color, financial positions and family circumstances make good friends. But if you’ve been friends with someone long enough, you know that every friendship, whether it is a friendship and relationship based on romance or not, has its moments and there are occasions when you fight and you fight hard. Maybe you were just angry and exploded, or maybe you didn’t show enough support, or maybe you were busy with other things; whatever the reason is, a long lasting relationship needs to be treasured and it’s important that you apologize before it ends.

 

Friends may be easy to find, but they are hard to keep. Saying that you’re sorry and apologizing benefits a friendship in many ways. First of all, it shows the friend that you’re aware that you did something wrong. Secondly, it shows them that you care so much as to forget everything that happened and apologize. By saying you are sorry, you take responsibility for your actions and hope for forgiveness, and this is often the end result if that friend cares about you as much as you do about them.

 

There are many ways to say you’re sorry, but most importantly, there are many ways to show it too. Words without action are meaningless, but once those words are followed by a gesture, even a little one, they are stronger and gain much more value and weight in your friend’s eyes.

 

One of the best ways to say you’re sorry is cooking and baking for that matter. If your friend loves food in general or just certain ingredients or spices, you can surprise them with a homemade, delicious recipe using the recipes found in this book. As the first course of a meal, appetizers are designed to be light and loaded with flavor, yet not too flavorful; just enough to entertain your taste buds and make them ask for more. You can see why, especially when you are trying to make up with a friend by throwing an intimate dinner party for him or her, it is crucial to have an interesting, delicious appetizer. The first course is what will keep your friend interested in the meal and buy you plenty of time to talk and solve your problems. Pick a recipe from this chapter and you definitely can’t go wrong!

[] Tortilla Turkey Roll Ups

These rolls are so easy to make and yet they taste so good. Plus, you can use a filling that your friend would like the most because it’s such a versatile recipe.

Servings: 4-6

Ingredients:

3 flour tortillas

8 oz. cream cheese

1 tablespoon chopped dill

1 tablespoon chopped chives

1 pinch salt

1 pinch freshly ground pepper

1 red bell pepper, cored and sliced

1 green bell pepper, cored and sliced

½ lb. grilled turkey meat, shredded into fine pieces

2 lettuce leaves, shredded

[] Cheese Stuffed Rice Balls

Traditionally, these rice balls are called arancini and they are delicious. The best surprise is the gooey, cheesy inside, of course, which creates a delicious contrast with the crisp outside.

Servings: 4-6

Ingredients:

3 cups cooked rice (choose a type of rice that has more gluten)

2 eggs

½ cup grated Parmesan cheese

Salt and pepper to taste

10 oz. mozzarella, cut in small cubes

1 cup breadcrumbs

1 egg

2 cups canola oil for frying

Directions:

These gooey and delicious sticks bring happiness to anyone and everyone. They are easy, cheesy, and much healthier than store bought mozzarella sticks or fried ones.

Ingredients:

10 oz. mozzarella cheese, cut in thick sticks

½ cup flour

1 egg, beaten

1 cup breadcrumbs

½ teaspoon garlic powder

½ teaspoon onion powder

½ teaspoon chili powder

1 teaspoon salt

4 tablespoons olive oil

Directions:

[] Bacon Wrapped Dates with Macadamia Filling

These appetizers offer a perfect balance between the salty bacon and sweet chewy dates along with a luscious yet crunchy center with an earthy flavor.

Ingredients:

12 jumbo dates

6 slices of bacon, sliced in half lengthwise

2 oz. softened goat cheese, crumbled

12 whole toasted and unsalted macadamia nuts

Similar to bruschetta, crostini are crisp and versatile. This recipe combines the creamy ricotta with figs and although the combination sounds rather sweet, believe me, it’s savory and oh so delicious!

Ingredients:

8 slices ciabatta bread

1 ½ cups fresh ricotta cheese

2 tablespoons white wine

2 garlic cloves, minced

1 shallot, finely chopped

8 large figs, halved

4 bacon slices, shredded

Salt and pepper to taste

4 tablespoons olive oil

These olives can be made days ahead, even weeks. They can count as canned goodies but no matter how long you store them, they are delicious. Your friend will surely appreciate them.

Ingredients:

2 cups mixed pitted olives

6 tablespoons olive oil

4 spring fresh rosemary (leaves only)

4 basil leaves

4 cloves garlic, sliced

1 pinch chili flakes

Zest and juice from 1 lemon

[] Baked Brie and Pears En Croute

This delicious appetizer combines the amazing and creamy taste of Brie with the sweet hint of pears. Everything is then wrapped up in a salty crust of pastry dough and baked to perfection until the outside is crisp and the inside has melted and is gooey.

Servings: 4-6

Ingredients:

2 pears, peeled, cored and diced

2 tablespoons brown sugar

2 tablespoons Bourbon

2 tablespoons water

1 pinch cinnamon powder

1 pinch ground ginger

1 puff pastry sheet, defrosted

1 round of Brie cheese (8 ounces)

1 egg, beaten

Directions:

p<>{color:#000;}. In a small saucepan, combine the pears with the brown sugar, Bourbon, water, cinnamon, ginger, and a pinch of salt.

[] Hot Spinach Artichoke Dip with Tortilla Chips

Yum! It’s a cheesy, gooey, hot spinach and artichoke delight with some spicy and crisp tortilla chips.

Servings: 8-10

Ingredients:

Dip:

10 oz. cream cheese

1 pinch chili flakes

2 tablespoons Parmesan cheese, grated

2 tablespoons Romano cheese, grated

1 garlic clove, minced

1 shallot, chopped

1 tablespoon olive oil

¼ teaspoon dried basil (or 1 tablespoon fresh)

1 jar artichoke hearts, drained and finely chopped

2 cups fresh spinach, chopped

Salt and pepper to taste

 

Chips:

4 tortillas, cut into smaller pieces

1 teaspoon garlic powder

1 teaspoon onion powder

1 pinch salt

1 pinch smoked paprika

Directions:

p<>{color:#000;}. Heat the olive oil in a skillet and stir in the garlic and shallot. Sauté for 1 minute then throw in the artichokes and spinach. Sauté for 5 minutes then season with a bit of salt and pepper. Remove from the heat and set aside to cool down.

[] Pizza Stuffed Mushrooms

I’m sure your friend loves pizza so why not surprise them with one of these delicious mushroom pizza bites? They are so easy to make and yet so flavorful!

Servings: 10

Ingredients:

10 large mushrooms

1 red bell pepper, cored and diced

1 cup cooked quinoa

¼ cup chopped black olives

1 pinch chili flakes

1 cup cream cheese

2 tablespoons chopped chives

1 pinch freshly ground pepper

2 tablespoons tomato paste

2 cups grated Cheddar cheese

Salt to taste

Directions:

[] Garlicky Pull Apart Bread

It can’t get easier than this in terms of appetizers. Just take a loaf of bread, a bit of garlic, and plenty of cheese and you can create this gooey, delicious pull apart bread to share with your friend.

Servings: 2-4

Ingredients:

1 loaf bread of your choice

3 oz. butter, softened

4 garlic cloves, minced

½ teaspoon dried thyme

1 teaspoon chopped rosemary

½ cup grated Parmesan cheese

1 cup grated Cheddar cheese

1 cup grated Gruyere

1 pinch freshly ground pepper

Directions:

p<>{color:#000;}. Slice a crisscross pattern into the bread without cutting it all the way through, but rather half way through. The bottom of the bread has to remain intact to hold the bread together. Place in a baking tray and set aside.

[] Mediterranean Focaccia

Focaccia is an Italian bread topped with all sort of goodies, from tomatoes to herbs and even meat. What you decide to top your focaccia with is entirely up to your imagination!

Servings: 4-6

Ingredients:

3 cups all-purpose flour

¾ cup warm water

½ cup warm milk

2 teaspoons active dry yeast

1 teaspoon sugar

½ teaspoon salt

½ cup black olives, pitted

1 tablespoon chopped rosemary

1 cup cherry tomatoes, quartered

4 tablespoons olive oil

1 pinch freshly ground pepper

Directions:

p<>{color:#000;}. In a large bowl, combine the flour with the yeast, sugar, salt, water, and milk and mix well with a spoon at first before kneading for at least 5 minutes to obtain an elastic dough. Cover the bowl with plastic wrap and allow the dough to rise for 30 minutes.

p<>{color:#000;}. Transfer the dough onto a floured working surface and roll it into a ½-inch thick sheet. Place it on a baking tray.

[] Stuffed Jalapeño Peppers

Spicy and flavorful, these stuffed peppers are absolutely delicious, perfect to serve to your friends, especially if they enjoy a bit of spice.

Servings: 12

Ingredients:

12 jalapeños

1 cup cream cheese

½ cup crumbled feta cheese

1 cup grated Cheddar cheese

2 eggs

2 tablespoons milk

¼ teaspoon cumin powder

2 tablespoons chopped dill

Salt and pepper to taste

½ cup flour

2 eggs, beaten

1 cup breadcrumbs

2 cups vegetable oil for frying

1 lime for serving

Directions:

p<>{color:#000;}. Take the jalapeños and remove the core of each pepper, being careful to leave them all intact so that you can stuff them later. Be careful during this step because jalapeños can be very spicy and touching your face or eyes after handling jalapeños is painful. Remove all of the seeds and put the peppers aside.

p<>{color:#000;}. In a bowl, combine the cream cheese with the feta cheese, Cheddar, eggs, milk, cumin powder, dill, and salt and freshly ground pepper to taste.

[] Black Bean Hummus and Tortilla Chips

Dips are amazing with their creaminess and rich flavors, especially when we talk about black beans which are the most flavorful of all. Serve this dip with tortilla chips for a real Mexican experience.

Servings: 4-6

Ingredients:

Dip:

4 cups canned black beans, drained

4 garlic cloves

2 tablespoons tahini paste

1 jalapeño pepper, seeded and sliced

1 teaspoon cumin powder

¼ cup extra virgin olive oil

2 tablespoons lemon juice

1 pinch chili pepper

Salt to taste

 

Tortilla chips:

3 flour tortillas

4 tablespoons olive oil

1 teaspoon cumin powder

1 teaspoon garlic powder

1 teaspoon salt

Directions:

p<>{color:#000;}. To make the dip, mix all of the ingredients in a blender or food processor and pulse until well blended and smooth.

[] Savory Appetizer Bread

This savory bread is moist and delicious and the great thing about it is that it will taste the same up to two days after it’s been made.

Servings: 8-10

Ingredients:

5 eggs

1 cup heavy cream

2 cups all-purpose flour

1 teaspoon baking powder

1 cup diced ham

1 cup grated Cheddar cheese

1 red bell pepper, cored and diced

¼ cup black olives, chopped

½ cup milk

Salt and pepper to taste

2 tablespoons chopped chives

Directions:

p<>{color:#000;}. In a large bowl, mix the eggs with the heavy cream and milk. Stir in the flour sifted with a pinch of salt and ground pepper as well as the baking powder.

[] Blue Cheese Stuffed Dates

Although rather sweet, dates can be used in savory combinations and this appetizer is a great example. Just stuff them with cheese and a piece of walnut or pecans and your appetizer is ready.

Ingredients:

12 jumbo size dates

12 walnut halves

12 bites of blue cheese (replace with your favorite cheese if preferred)

Directions:

1 cup Goji berries

1 cup pumpkin seeds

1 cup blanched almonds, coarsely chopped
