Green Levantine Cuisine is a cookbook of delicious vegan food from the Levant and other Arabic speaking countries. This book includes 23 of the most popular plant-based recipes throughout the Middle East and North Africa, comprised of ingredients easily found in non-Arab countries. The purpose of this cookbook is to help vegans and non-vegans explore the rich Middle Eastern and North African Cultures through food that is good for your body and the earth we live on. This cookbook is mostly comprised of very simple recipes, with very little cooking knowledge or experience required! All of the recipes in this cookbook approximate to four servings, although, if you eat large quantities of food like me, you may be able to finish the whole meal alone! Keeping in mind that specific measurements are rarely used to cook many of the recipes in this book, quantifying the amount of ingredients was one of the toughest parts of writing this book, and required many trials until I achieved the perfect amount of the ingredients. The help of my Mother and four older sisters was crucial in the making of this book. Cover by Comfort Anyanwu.
